This chocolate avocado pudding recipe has saved my life many times… especially during that time of the month. At first, the combination might sound odd, but it’s delicious.

Chocolate avocado parfait (makes 2 servings)
1 scoop of chocolate protein powder (we used Jay Robb)
⅓ cup almond milk
1 tsp of shaved coconut
5 pistachios for topping
How to make it:
- Slice the avocado in half, remove the seed and the peel
- Blend avocado, almond milk and protein powder in the blender on medium speed
- Move to a bowl and top with shaved coconut and pistachios
